Huevos Rancheros are the elite of the breakfast group. They are a traditional mexican breakfast and are loved by many. Who wouldn’t want to wake up to this every morning. Well if you want to do just that we are going to tell you exactly how these are made. It’s easier than you think.

Ingredients:

 

4 small flour tortillas

4 eggs

1 large ripe tomato chopped

1 onion

2 tablespoons of olive oil

400g can of red kidney beans

Chopped coriander

Fresh bay leaves

2 garlic cloves

Jalapeno pepper

30g cheddar cheese grated

½ spoon of chilli powder and lime juice

Teaspoon of cumin and oregano

 

How to make:

 

1. Heat a pan using the olive oil and add your chopped garlic and onions, then your tomatoes and chillies.

2. Then add red kidney beans, chilli powder, a teaspoon of cumin and oregano and cook for 10 minutes, stir and set aside.

3. Slice the fresh tomato and lay it over the mixture on the pan and let it cool

4. Crack your eggs into a separate pan until they are fried and the egg white is clearly visible.

5. Warm your tortillas up on the grill or oven, whichever suits for 1 minute

6. Place your tortillas onto a plate flat, pour your beans mix onto it and top it with grated cheese

7. Place the eggs on top of all of this

8. Squeeze some lime onto it and add guacamole

Ingredients:

900ml chicken or vegetable stock

2 shredded spring onions

2 carrots

2 celery

2 mushrooms

Herbs

50g of noodles

1 boneless skinless chicken breast

Chopped ginger and garlic cloves

Soy Sauce

 

How to make:

 

1.Pour the chicken/vegetable stick into a pot along with the chicken breast, ginger and garlic cloves and cover with water and turn to a hot boil.

2. Add the chopped carrots, celery, mushrooms and shredded onions, cut to your liking into the pot

3. When at boiling point, turn heat down to simmer point and remove the chicken.

4. Shred the chicken until it is fully shredded into pieces.

5. Strain the rest in the pot and return to pot once done

6. Add the shredded chicken and noodles and let simmer for 3-4 minutes.

7. Sprinkle some herbs while simmering

8. Strain one more time.

9. Split between two bowls and drizzle some soy sauce for some added flavor.

The Espresso Martini is a cocktail that oozes sophistication. Made using freshly brewed coffee, liqueur and vodka, this classic tipple is the perfect addition to add a chic edge to any type of party.

Ingredients:

1 tsp Golden Caster Sugar

30ml Vodka

30ml Coffee Liqueur

30ml Fresh Brewed Espresso

3 Coffee Beans, to garnish

Ice

 

Method: 

1.Chill a martini glass by filling it with ice, and put it aside.

 

2. Pour golden caster sugar into a cocktail mixer and pour hot espresso on top.

 

3. Add the vodka and coffee liqueur.

 

4. Fill the cocktail shaker with ice to cool down the hot espresso. Seal the cocktail mixer and shake quickly until the outside of it is icy cold. The faster you shake the mixture, the better the distribution of the frothy cream will be on top of the cocktail.

 

5. Empty the ice out of the martini glass. Using a sieve or cocktail strainer, strain the liquid into the chilled martini glass. The cocktail will look golden brown at first, but will gradually turn a darker colour with a frothy cream on top.

 

6. Garnish with 3 coffee beans, if desired.

Orange and Pomegranate punch is a bright, fruity and warming drink that’s perfect for sharing. Ideal for a New Year’s party, the punch is a delicious pick-me-up that’s sure to get everyone in the festive spirit.

Ingredients: 

2 Cinnamon Sticks

4 Cloves

1.5 Cups Rum

0.5 Cups Pomegranate Molasses

1 Cup Orange Juice

3 Cups Ginger Ale

2 Cups Pomegranate Juice

2 tbsp Lime Juice

2 Oranges, Sliced

1 Pomegranate

 

Method:

1.Add the rum, pomegranate molasses, cinnamon sticks and cloves to a jug and stir. Leave to infuse for 55 minutes.

 

2. Once infused, add crushed ice and pour in the orange juice, ginger ale and pomegranate juice and stir.

 

3. Chop a lime in half and squeeze the juice into the jug.

 

4. Place orange slices and a handful of pomegranate seeds into the jug and stir.

 

5. Serve each drink in a chilled glass with a scattering of pomegranate seeds on top.
